Pan-Fried Pork Dumplings
Folding takes practice and the first ones always look rough. They taste the same.

- 300 g minced pork
- 200 g cabbage, finely chopped and salted
- 2 spring onions, chopped
- 1 tbsp grated ginger
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 30 round dumpling wrappers
Method
- Squeeze the salted cabbage dry. Mix it with the pork, spring onions, ginger, soy sauce and sesame oil.
- Put a teaspoon of filling on each wrapper, wet the edge and fold into a half-moon, pressing out the air.
- Fry flat side down in a little oil until golden, about two minutes.
- Add 80 ml water, cover and steam for six minutes. Uncover and cook until the bottoms crisp again.
Note. Freeze the extras on a tray before bagging them. Cook from frozen with an extra two minutes of steaming.
